Wine Pairings with Foie Gras
Foie gras with Sauternes is considered to be the classic pairing. This pairing is at its absolute best when the foie gras dish is served with acidic fruits such as apples, grapes, figs, or berries. Sauternes is a heavenly pairing with cold foie gras preparations such as foie gras terrine, block, torchon style, or Foie Gras Cured in Lavender Sea Salt.
Foie gras desserts, such as Foie Gras Ice Cream, have become increasingly popular and present yet another ideal pairing with Sauternes.
Foie Gras with Chardonnay is a great alternative to pairing with Sauternes. Chardonnay should be seriously considered with foie gras that is seared and served without an acidic or sweet sauce. Foie Gras Club Sandwich or Pan-Fried Duck Foie Gras with Rice, Honey and Soy Avocado Puree are examples of preparations we recommend pairing with Chardonnay. Cold foie gras preparations (terrine, block, torchon style) served with fresh or toasted baguette or brioche, also pair nicely with a rich, intense Chardonnay.
