In the wild, Acipenser Gueldenstaedtii inhabits primarily the Northern Caspian Sea and the shelf zone of the Middle Caspian, reaching maturity in 8 to 10 years, with an average length of 4.5 feet, weighing approximately 50 pounds. Its farmed counterpart reaches maturity in roughly 6 years and weighs between 40 to 50 pounds, averaging 4 to 5 feet in length.
The complexity yet smoothness with minimal brine makes this caviar best served simply a soft blini, lightly toasted brioche or straight on a pearl spoon. Since household refrigerators are usually too warm for caviar products, we suggest the following for proper storage: place a sealed bag of ice, or a frozen ice pack, on the caviar tin and place it in the coldest part of the refrigerator, usually the back; replenish the ice as it melts. If the coldest part of your refrigerator is under 36 degrees, ice is not necessary.
