This Verjus (pronounced vair-ZHOO) is the natural juice of seedless green grapes. Used in the traditional French cuisine since the middle ages it is an alternative to best vinegars.Its refreshing fruity acidity gives a bright note to salads, mushrooms, oysters, shellfish, poultry, roasted meat and fish dishes. Ideal for deglazing and marinades.
