Harvested in the fall, when the free range geese have consumed more food than usual, the goose livers are somewhat enlarged, lighter in color and contain more fat, giving them a rich and buttery flavor. Perfect for making goose liver pate.
Each two pound bag of fatty goose liver contains about 15 goose livers. Remove veins and extra fat around the liver before using to make goose liver pate or terrine.
