Sear Rougie foie gras slices on each side in a heavy skillet set over medium heat. If cooking frozen slices, start with a cold pan, add the foie gras slices and heat gradually on medium heat. Cook on each side for 2 1/2 - 3 minutes. If thawed, cook for about 1.5 - 2 minutes on each side.
