Fresh Burgundy truffles arrive from France weekly from mid September through mid November. Burgundy truffles have a delicate but distinctive hazelnut flavor and an intense aroma. They are more flavorful and aromatic than summer truffles, but not as robust in flavor as Perigord black truffles.
Slice truffles very thin and add to sauces and salads. Burgundy truffles are best served raw or slightly warmed.
Fresh truffles are shipped overnight or 2-day only and should be used within a few days. Store in the refrigerator, wrapped in a paper towel (changed daily or as needed) and in an airtight container.
